This morning I had some free time to cook.

I got up quite early today. 7:30. I was gung ho to get some things done that I have been putting off for some time now, like exercising and meeting with some friends. The trouble was that it was 7:30. The exercise class I wanted to take started at 7:30, (yes I know that sounds insane) and all of my friends were still asleep. So I got out of bed as not to disturb my dog or my husband and I wandered into the kitchen. My wok caught my eye and I knew what I was going to do; stir fry noodles and chicken! So much for not disturbing the family.

This particular dish takes some time prepping. You want to make sure that everything is ready to go in once you start cooking because it goes fast. So my first hour was spent slicing onions, carrots, red bell pepper and chicken. Then I spent time combining cornstarch and water for thickening and in a separate bowl combine chicken stock, soy sauce, sherry, sesame oil and red pepper flakes. I also like to add a little chili oil.

Once I had everything ready, I heated a little oil in large pan or wok. I used a large pan because it was readily available and I didn't want to get out the wok making a bunch of noise.

First, I stir fried the garlic and used a slotted spoon take it out and set it on a plate. Then I stir fried an egg and when it was set, I put it next to the garlic. Having added a little more oil, I stir fried the chicken and set it aside when fully cooked. I used the same pan to stir fry the veggies. This time I used canned stir fry straw mushrooms and they turned out horrible.

So I pulled them out and sauteed some fresh ones.

After all the veggies were tender, I added the noodles, the soy mixture and the cornstarch mixture to thicken the sauce. Then I added the chicken, egg and garlic. I cooked until the chicken was heated through.

This dish is awesome and really healthy.


So I had the day off and I spent it doing two things I love: cooking and reading. The book that I am currently reading is Lizz Free or Die.  It is a good book and I want to finish it because I am eager to get into another book;  You Take It From Here by Pamela Ribon. Pam is a friend of mine who is a funny, funny lady.
